  • 1 tsp olive or canola oil
  • 1 cup diced turkey kielbasa
  • 1 medium onion, diced
  • 1 tsp olive or canola oil
  • 1 can (14 oz) diced tomatoes
  • 2 bay leaves
  • Chopped Scallions
  • 1  medium green bell pepper, diced
  • 2  cloves garlic, minced
  • 8 oz boneless, chicken breast, cubed
  • 1 cup long-grain rice
  • 2 1⁄4 cups low-sodium chicken stock
  • Salt and black pepper to taste
  • 1 Tbsp tomato paste
  • 1/8 tsp cayenne pepper
  • 8 oz medium shrimp, peeled and deveined
  • Frank’s Red Hot, Tabasco, or other hot sauce

How To Make Jambalaya

  1. Heat the oil in a pan over low heat.
  2. Add the kielbasa and cook for about 3 minutes, until it’s slightly browned.
  3. Add the onion,  bell pepper, and garlic and cook, stirring continuously for about 4 to 5 minutes, until the vegetables have loosened up.
  4. Add the chicken and cook until it’s lightly browned for about 3 -4 minutes.
  5. Stir in the rice, chicken stock, tomatoes, tomato paste, cayenne pepper, and bay leaves.
  6. Adjust the heat to low, cover, and let it simmer for 17 minutes until almost all the liquid has been soaked up by the rice.
  7. Open the cover, add the shrimp, and cook for about 2 to 3 minutes, until the rice is soft and the shrimp is cooked through.
  8. Remove the bay leaves.
  9. Season with salt, black pepper, and hot sauce, and sprinkle the scallions.
  10. Serve warm
